I wasn't able to create a resolution with these settings in the extension block. Am I correct in assuming that what I want to achieve is currently not possible ?

I don't have any HDR monitors to test, so I don't know what's needed to get it working. Did you try adding a detailed resolution without removing any of the data blocks in the extension block?
